Good old Recipe for you to try..Hocks and Beans, good stick to you ribs food there..

Ham Hocks 2ea.
Olive Oil 2 Tablespoons
Pinto Beans dry 2 cups
Onion (medium chopped) 1 ea.
Garlic (minced) 4 cloves
Water 1.5 liters
Salt 1 Teaspoon
Pepper 1 Teaspoon
Chili Powder 1 Teaspoon
McCormicks Montreal Steak to taste

Soak you beans overnight in a crock pot, ensuring they are fully covered and pick out the bad beans, in the morning add onion,garlic salt, pepper, chili powder
Take two Ham Hocks, season and braised in olive oil, I use McCormick Montreal Steak for the seasoning on the hocks. Add Braised Hocks to your beans and other ingredients set crock pot to High for 4-6 hours or until beans are soft and tender. Makes enough for two really hungry guys who have been prospecting all day. :080402gudl_prv:

Going to add to this a lil'

This is mine after much trial and error, but very close to what you have.

When i cook the hocks I add the 'onion & some fresh chopped Jalepeno(seeded) When onions are clear its done.

Pepper can be added early but not salt(makes beens tough) add salt at end of cooking.

If you have an old hambone it really takes this to another level as the bits of ham just elevate this.

Drain the water after soaking overnight

If your out in the woods, squirrel or rabbit makes a great sub for the ham in a pinch.

Your missing the other half of that meal.........

You cook up some real thin (3/4 in. thick) cornbread, cut it up & put it on (crumble it a bit) the plate first.

Then latle your ham & beans on top letting your cornbred soak up the juices..........now...THATS A MEAL.
